The Timeless Gut Healing Elixir: My Chicken Bone Broth & Soup Recipe

Bone broth has long been regarded for its ability to support digestion, reduce inflammation, and promote a healthy gut lining. By turning it into a hearty soup, we add even more layers of flavour and nourishment. Whether you're struggling with gut issues, want to support your immune system, or are looking for a wholesome winter meal, my bone broth recipe is perfect for anyone seeking better health

Ingredients
- 1 Organic chicken, about 2 lbs (can ask the butcher to cut it up into pieces for a soup)
- For added health benefit you can chuck in:
- cooked bones from a previous meal (with or without meat)
- a whole carcass
- chicken parts including: feet, neck
- cooked bones from a previous meal (with or without meat)
- 4 Cups cold water or enough to cover the bones
- 1-2 Tbsp apple cider vinegar
- 1 medium onion, peeled and quartered (leave out if FODMAP sensitive)
- 3-6 Cloves garlic, peeled and sliced in half (leave out if FODMAP sensitive)
- 3-4 Leeks, roughly chopped (leave out bulb if FODMAP sensitive)
- 3-4 Carrots, peeled and roughly chopped
- 3-4 Celery stalks, peeled and roughly chopped (only use celery leaves if FODMAP sensitive)
- 1/2 Cup dried wild mushrooms, such as shitake
- 1 Tbsp turmeric powder Or 1 fresh turmeric rhizome, peeled and roughly chopped
- 3-6 Slices fresh ginger root, peeled
- 1 Tbsp dried oregano
- 1-2 Tbsp good quality sea salt (or to taste)
- Pepper to taste
- Handful fresh parsley, only add the parsley for the last 30 minutes of cooking
Instructions
- Combine whole chicken (and extra bones), water and vinegar in a pot, bring to a boil, remove any scum that has risen to the top and reduce heat
- Simmer for 45-60 minutes and remove the cooked chicken meat and put aside
- Return all chicken bones back to the pot and simmer for 6-48 hours, the longer the better so that more gelatin and nutrients are released into the liquid
- At the last hour of cooking add the vegetables, spices and herbs
- Strain through a sieve and discard the bones, herbs, and all vegetables
For a Chicken Soup:
- At this point you can add the cooked meat and carrots back into the broth
- Can also add cooked brown rice or noodles
- Enjoy a delicious chicken soup
For a Bone Broth Elixir:

The broth can be frozen for months or stored in the refrigerator for up to 5 days When cooled, it will gel if there’s enough gelatin
- It can also be sipped as a warm drink, especially nice with a squeeze of lemon and a little sea salt

Pro Tip: Avoid reheating in the microwave, as it can destroy the valuable medicinal properties of the broth
